Spice Description:
Nigella seeds are small, matte-black grains with a rough surface and an oily white interior. They are roughly triangulate, 1 1/2 – 3 mm (1/16 to 1/8 in ) long. They are similar to onion seeds.
Bouquet: The seeds have little bouquet, though when they are rubbed they give off an aroma reminiscent of oregano.
Flavour: Slightly bitter and peppery with a crunchy texture.

Plant Description and Cultivation
An herbaceous annual of the buttercup family, about 60 cm (2 ft) high. The gray–green leaves are wispy and threadlike. Flowers are have five petals bout 2.5 cm wide (1 in), white with blue veins and appearing between June and September. They yield a seed capsule with five compartments each topped by a spike. The compartments open when dried to disperse the seeds. Nigella is native to western Asia where it grows both wild and cultivated. India, Egypt and the Middle East also cultivate it.

Nigella has been used since antiquity by Asian herbalists and pharmacists and was used for culinary purposes by the Romans. The seeds are known to repel certain insects and can be used like moth balls. The name nigella derives from the Latin nigellus, or niger, meaning black.
A spice that is made from seeds of the black cumin plant. A member of the parsley family of plants, black cumin is native to parts of Asia, India and Pakistan where the seeds are harvested. Narrow, tiny and curved in shape, Kala Jeera has a strong earthy aroma that becomes nutty flavored when cooked. Although it is not the same as cumin, it can be similarly used in small amounts to enhance the flavor of meats, soups, stews, rice, and sauces.

Culinary uses
The seeds of N. sativa, known as kalonji, black cumin (though this can also refer to Bunium persicum) or just nigella, are used as a spice in Indian and Middle Eastern cuisine. The dry roasted nigella seeds flavor curries, vegetables and pulses. The black seeds taste mostly like oregano crossed with pepper. Most people use it as a “pepper” in recipes with pod fruit, vegetables, salads and poultry.

Nigella is used in India and the Middle East as a spice and condiment and occasionally in Europe as both a pepper substitute and a spice. It is widely used in Indian cuisines, particularly in mildly braised lamb dishes such as korma. It is also added to vegetable and dhal dishes as well as in chutneys. The seeds are sprinkled on to naan bread before baking. Nigella is an ingredient of some garam masalas and is one of the five spices in panch phoran. In the Middle East nigella is added to bread dough.

Other uses
Several species are grown as ornamental plants in gardens, popular for their seed capsules, which are used in dried flower arrangements. Love in the mist are used exclusively for dried arrangements. These flowers are the best to add texture to any dried flower arrangement. The delicate, purple striped pods are used in several arrangements for an airy effect.

In India the seeds are used as a carminative and stimulant to ease bowel and indigestion problems and are given to treat intestinal worms and nerve defects to reduce flatulence, and induce sweating. Dried pods are sniffed to restore a lost sense of smell. It is also used to repel some insects, much like mothballs.

Attributed Medicinal Properties
Nigella is used in Indian medicine as a carminative and stimulant and is used against indigestion and bowel complaints. In India it is used to induce post-natal uterine contraction and promote lactation. The seed yields a volatile oil containing melanthin, nigilline, damascene and tannin. Melanthin is toxic in large dosages and Niugelline is paralytic, so this spice must be used in moderation.

Black cumin seed oil is used as a healthy dietary supplement. Black seed oil contains fatty acids, vitamins and minerals in a unique cell structure. Native to Western Asia, Turkey, Iraq, and Egypt, black seed oil has been valued for it’s health benefits for centuries, and is now becoming more well known in the West. As a general tonic 1 teaspoon of black seed oil, taken in food or drink, is said to benefit many conditions, in much the same manner as other oils rich in fatty acids, such as flax and walnut oils. According to Dr. Duke, the constituents in black cumin oil have been shown to have health benefits for: Stomach aches, asthma, bronchitis, coughs, digestive system, and fevers. Benefits and Side Effects
Black cumin seed is derived from a plant with the botanical name Nigella sativa. The plant is indigenous to Mediterranean areas, though it is grown in other parts of the world as well. The primary active ingredient in black cumin seed is crystalline nigellone. The substance was first identified and isolated for use in supplements in 1959. The usual recommended dosage is between 50 and 75 mg of a supplement made from standardized extracts. Black cumin seed oil is also available as a nutritional supplement. The seeds are cold pressed to extract the oil, which is especially effective when used topically on the skin to treat eczema, psoriasis, and dryness.black cumin seed is used to boost immune system function, as an anticancer agent, and to treat skin conditions, including eczema, abscesses, and boil.Very effective for acne, pimples.

Black cumin seed oil can also be taken internally to treat arthritis and asthma and to boost the immune system. The recommended dosage of the oil is one teaspoon daily with meals. It can be mixed with juice or other beverages and should be refrigerated after opening.

As with many supplements, black cumin seed works best when used on a regular basis so that it can support the body’s natural healing ability. Though there is no known toxicity, pregnant and lactating women should not use black cumin seed, which has a history of use in large doses to induce abortion.

Asafoetida gets its name from the Persian aza, for mastic or resin, and the Latin foetidus, for stinking. It is a gum that is from the sap of the roots and stem of the ferula species, a giant fennel that exudes a vile odour. Early records mention that Alexander the Great carried this “stink finger” west in 4 BC. It was used as a spice in ancient Rome, and although not native to India, it has been used in Indian medicine and cookery for ages. It was believed that asafoetida enhanced singers voices. In the days of the Mughal aristocracy, the court singers if Agra and Delhi would eat a spoonful of asafoetida with butter and practice on the banks of the river Yamuna.

Plant Details and it’s Cultivation
Asafoetida is grown chiefly in Iran and Afghanistan from where it is exported to the rest of the world. In India it is cultivated in Kashmir. It is a perennial fennel that grows wild to 3.6 metres (12 ft) high, in large natural forests where little else grows. It bears fine leaves and yellow flowers. The roots are thick and pulpy and also yield a similar resin to that of the stems. All parts of the plant have the distinctive fetid smell. In March and April, just before flowering, the stalks are cut close to the root. A milky liquid oozes out, which dries to form a resin. This is collected and a fresh cut is made. This procedure lasts for about three months from the first incision, by which time the plant has yielded up to two pounds of resin and the root has dried up.

Asafoetida is a hard resinous gum, grayish-white when fresh, darkening with age to yellow, red and eventually brown. It is sold in blocks or pieces as a gum and more frequently as a fine yellow powder, sometimes crystalline or granulated.
Bouquet: a pungent smell of rotting onions or sulfur. The smell dissipates with cooking.
Flavour: on its own, extremely unpleasant, like concentrated rotten garlic. When cooked, it adds an onion-like flavour.

It is vital to keep asafoetida in airtight containers as its sulfurous odour will effect other foods and spices. It is most commonly available as a powder or granules that can be added directly to the cooking pot. It is also sold in lumps that need to be crushed before using. This is a very powerful spice and even in its ground state lasts well over a year if stored properly, away from light and air.

Uses
Use in minute quantities, adding directly to cooking liquid, frying in oil, or steeping in water. Asafoetida is used mostly in Indian vegetarian cooking, in which the strong onion-garlic flavour enhances many dishes, especially those of Brahmin and Jain castes where onions and garlic are prohibited. It is used mostly in south and west India, though it does not grow there. It is used in many lentil dishes (often to prevent flatulence), vegetarian soups and pickles. It is also suited to many fish dishes and some pappadums are seasoned with asafoetida.

Medicinal Properties
Asafoetida is known as an antidote for flatulence and is also prescribed for respiratory conditions like asthma, bronchitis and whooping cough. Its vile smell has led to many unusual medical claims, mostly stemming from the belief that it’s foetid odour would act as a deterrent to germs. In several European countries a small piece of the resin would be tied on a string and hung around childrens necks to protect from disease. The shock of the sulfurous smell was once thought to calm hysteria and in the days of the American Wild West it was included in a mixture with other strong spices as a cure for alcoholism.

Asafoetida is useful as a digestive spice that has the additional benefit of lowering cholesterol and reducing gas. The pungent oil can be using to repel insects. Asafoetida was one of the most commonly prescribed herbs in the 19th century in the treatment of hysteria and for many symptoms associated with mood swings and depression.
According to ayurvedic medicine, asafoetida is a valuable spice and remedy for nervous disorders, colic, bowel spasms, and for spasmodic coughing due to whooping cough, pneumonia, and bronchitis. It is also regarded as an effective remedy for worms and other intestinal parasites.

Asafetida is said to have antispasmodic properties. It has been used in the past to treat hysteria and was sometimes taken as a sedative.  In India it is prescribed to treat flatulence and bronchitis.  It also has carminative, expectorant, laxative and sedative properties.  Asafetida acts as a local stimulant to mucous membrane, particularly that of the alimentary canal and therefore is a remedy of great value as a carminative in flatulent colic and a useful addition to laxative medicine.  There is evidence that the volatile oil is eliminated through the lungs which has been found useful for whooping cough, asthma, and bronchitis, as well as for croup and flatulent colic in infants.  It was formerly used as a sedative for hysteria, infantile convulsions, and spasmodic nervous conditions.  Some researchers have suggested that asafetida may help lower blood pressure and increase the amount of time it takes for blood to clot.  Like garlic, asafetida has been hung around the neck to ward off colds and other infectious diseases, but its only real effect seems to be its ability to keep other people and their colds at arm’ length. Owing to its vile taste it is usually taken in pill form, but is often given to infants per rectum in the form of an emulsion. The powdered gum resin is not advocated as a medicine, the volatile oil being quickly dissipated. Asafetida is admittedly the most adulterated drug on the market. Besides being largely admixed with inferior qualities of Asafetida, it has often red clay, sand, stones and gypsum added to it to increase the weight.

Side Effects:
The uncooked herb can cause nausea and vomiting. Using asafoetida over long periods may cause throat irritation, gas, diarrhea, and burning urination. This herb should be avoided during pregnancy. It may affect the menstrual cycle, and it is known to induce miscarriage.

Etymology: The spice gained its Latin name anisum as a result of confusion with dill, known in Greek as an?son. Names of anise in virtually all European languages are derived from anisum.
The Sanskrit name shatapushpa means “one hundred flowers” and refers to the flower cluster. The Hindi name saunf properly denotes fennel, of which anise is incorrectly thought to be a foreign variety. To distinguish anise clearly from fennel, the specialised terms patli saunf “thin fennel” or vilayati saunf “foreign fennel” are often used. Some languages refer to the sweetness of anise, e.g. Greek glykaniso “sweet anise”, or name anise as a sweet variant of other spices, e.g. Indonesian jinten manis and Arabic kamun halu “sweet cumin” (a name sometimes also used in English). Arabic has another, similar name habbu al-hulwa “sweet grains”. The Portuguese term erva doce “sweet herb” may denote anise, fennel or sweetleaf (stevia rebaudiana).
The genus name pimpinella is Late Latin for “narrow-ribbed fruit”.

Description: Several spices have been called anise. The native of Egypt, Pimpinella anisum, is anise seed or aniseed, while China is the source of Illicum verum, star anise. In the past, dill, caraway and fennel seeds were confused with anise seed.

Useful Parts: The seeds have been used widely in cooking, and are popular in spicy cakes. The oil of anise  is often used in artificial licorice, and gives its distinctive taste to liqueurs such as anisette and raki. Anise is used in many processed foods and in cough medicines, and is often included in pet foods for the flavor it imparts.
Genaral Uses:In Western cuisine, anise is mostly restricted to bread and cakes although fruit products are occasionally aromatised with anise. In small dosage, anise seeds are sometimes contained in spice mixtures for sausages and stews. Their main applications are, however, anise-flavoured liqueurs, of which there are many in different Mediterranean countries including rak? in Turkey, ouzo in Greece and pernod in France. In many cases, oil of anise is partially or wholly substituted by oil of star anise in these products.

In the East, anise is less known and both fennel and star anise are more easily available and more popular. Anise may substitute for fennel in North Indian recipes, but it is a less suitable substitute for star anise in Chinese foods.
Anise appears occasionally in Mexican recipes, but native anise-flavoured herbs (Mexican tarragon and Mexican pepper-leaf) are more commonly used. Anise is an acceptable substitute for both, although tarragon is even better.
Several plants generate an aroma comparable to that of anise. Within the apiaceae (parsley) family, fennel and cicely copy the aroma of anise perfectly and chervil and dill also resemble anise, although their fragrance is less pure. In Far Eastern cuisines (India, Iran and Indonesia), no distinction is made between anise and fennel and the same name is usually given to both of them. In the Philippines star anise is very popular and is referred to as “anise” for short.

Medicinal Properties: Over the centuries, anise has been reported to have numerous medical benefits, but there is no evidence that it offers any pharmacologic benefit. It is thus a flavorful digestive spice that may be soothing, stimulating or carminative (relieving gas) in different individuals, and it is a popular taste in drinks, confections and simple proprietary medicines.

Historical View :
Oil of anise possesses the same aromatic, carminative, and stimulant properties as anise fruits, and as already noticed is commonly preferred to them as a medicine, and is alone official in the British Pharmacopoeia.

Mace or Indian Javatri

Mace is the aril (the bright red, lacy covering) of the nutmeg seed shell. The mace is removed from the shell and its broken parts are known as blades.

The history of mace is closely tied to the history of nutmeg for obvious reasons, though the two items have been treated seperately . Because the yield of mace is much less than nutmeg’s it has had greater value. A pile of fruit large enough to make one hundred pounds of nutmeg produces a single pound of mace. When the Dutch controlled the Moluccas (the Spice Islands), one colonial administator sent orders that the colonists should plant fewer nutmeg trees and more mace trees.

Spice Description:
In its natural state, mace is a bright crimson lace up to 35 mm (1-1/2 in) long, encasing the brown nutmeg in irregular, fleshy lobes. As it is dried, it develops its charcteristic aroma but loses its bright red colour. Mace from the West Indies is a yellowish brown colour and with fewer holes than mace from East Indian nutmegs which are more orange when dried. The mace from either locale can become brittle and horny, though the best quality mace will retain some pliability and release a little oil when squeezed. It is flattened and sometimes roughly broken into ‘blades’. It is also sold ground and sometimes still enclosing the nutmeg.
Bouquet: sweet and fragrant, similar to nutmeg, but stronger.
Flavour: warm. sharp and aromatic, more intense and slightly sweeter than nutmeg

The nutmegs Myristica are a genus of evergreen trees indigenous to tropical southeast Asia and Australasia. They are important for two spices derived from the fruit, nutmeg and mace.

Mace within nutmeg fruitNutmeg is the actual seed of the tree, roughly egg-shaped and about 20–30 mm long and 15–18 mm wide, and weighing between 5 and 10 grams dried, while mace is the dried “lacy” reddish covering or arillus of the seed.

Several other commercial products are also produced from the trees, including essential oils, extracted oleoresins, and nutmeg butter (see below).

The pericarp (fruit/pod) is used in Grenada to make a jam called Morne Delice. In Indonesia, the fruit is sliced finely, cooked and crystallised to make a fragrant candy called manisan pala (“nutmeg sweets”).

The most important species commercially is the Common or Fragrant Nutmeg Myristica fragrans, native to the Banda Islands of Indonesia; it is also grown in the Caribbean, especially in Grenada. Other species include Papuan Nutmeg M. argentea from New Guinea, and Bombay Nutmeg M. malabarica from India; both are used as adulterants of M. fragrans products.

Culinary Uses
Mace and nutmeg are very similar, though mace is somewhat more powerful. Mace is a lighter colour and can be used in light-coloured dishes where the darker flecks of nutmeg would be undesirable. A small amount will enchance many recipes, adding fragrance without imposing too much flavour. Mace works especially well with milk dishes like custards and cream sauces. It contributes to flavouring light-coloured cakes and pastries, especially donuts. It can enhance clear and creamed soups and casseroles, chicken pies and sauces. Adding some to mashed potatoes or sweet potatoes creates a more interesting side dish. Some beverages improve with a little mace, especially chocolate drinks and tropical punches.

In Indian cuisine, nutmeg is used almost exclusively in sweets. It is known as jaiphal in most parts of India. It is also used in small quantities in garam masala.

In other European cuisine, nutmeg and mace are used especially in potato dishes and in processed meat products; they are also used in soups, sauces and baked goods.

Japanese varieties of curry powder include nutmeg as an ingredient.

Nutmeg is a traditional ingredient in mulled cider, mulled wine, and eggnog.

Other uses:

Essential oils:

The essential oil is obtained by the steam distillation of ground nutmeg and is used heavily in the perfumery and pharmaceutical industries. The oil is colourless or light yellow and smells and tastes of nutmeg. It contains numerous components of interest to the oleochemical industry, and is used as a natural food flavouring in baked goods, syrups (e.g. Coca Cola), beverages, sweets etc. It replaces ground nutmeg as it leaves no particles in the food. The essential oil is also used in the cosmetic and pharmaceutical industries for instance in tooth paste and as major ingredient in some cough syrups. In traditional medicine nutmeg and nutmeg oil were used for illnesses related to the nervous and digestive systems. Myristicin and elemicin are believed to be the chemical constituents responsible for the subtle hallucinogenic properties of nutmeg oil. Other known chemical ingredients of the oil are α-pinene, sabinene, γ-terpinene and safrole.

Nutmeg butter
Nutmeg butter is obtained from the nut by expression. It is semi solid and reddish brown in colour and tastes and smells of nutmeg. Approximately 75% (by weight) of nutmeg butter is trimyristin which can be turned into myristic acid, a 14-carbon fatty acid which can be used as replacement for cocoa butter, can be mixed with other fats like cottonseed oil or palm oil, and has applications as an industrial lubricant.

Medical Use
Externally, the oil is used for rheumatic pain and, like clove oil, can be applied as an emergency treatment to dull toothache. Put 1–2 drops on a cotton swab, and apply to the gums around an aching tooth until dental treatment can be obtained. In France, it is given in drop doses in honey for digestive upsets and used for bad breath. Use 3–5 drops on a sugar lump or in a teaspoon of honey for nausea, gastroenteritis, chronic diarrhea, and indigestion.

Alternatively a massage oil can be created by diluting 10 drops in 10 ml almond oil. This can be used for muscular pains associated with rheumatism or overexertion. It can also be combined with thyme or rosemary essential oils. To prepare for childbirth, massaging the abdomen daily in the three weeks before the baby is due with a mixture of 5 drops nutmeg oil and no more than 5 drops sage oil in 25 ml almond oil has been suggested.

History of nutmeg as a medicinal agent:
In Arabian medicine:

Arab physicians seem to have used nutmeg as a drug from the first centuries A.D., although just how they used it is not known. Warburg wrote that Myristica was recommended for a variety of disorders in this early period but was taken mainly for diseases of “the digestive organs, from the mouth to the stomach to the intestines, to the liver and spleen, as well as for freckles and skin blotches “.

Later Arab physicians referred nutmeg to the class of “warm and dry drugs” and elaborated on its applications. By the 11th century, for instance, the spice was praised for its effect on the kidneys, was used to combat pain, vomiting, and lymphatic ailments, and was even considered aphrodisiac . According to Ainslie , Vol. I, though, the Arabs were using nutmeg almost solely as a hepatic and tonic by the 19th century. Oddly enough, physicians of the Near East took little notice of mace until the early 1800s when they began to prescribe it as an aphrodisiac and carminative .

At the present time, nutmeg is still important in this part of the world. A pharmacologist at the Hebrew University of Jerusalem writes :

“The nutmeg is used by Arabs of Israel and people of its oriental Jewish communities, especially Yemenites, as a drug of their folk medicine, as well as a spice and as an important ingredient in love-potions. It is used against vomiting and to regulate the movements of the bowels; it is good for the liver and for the spleen. It is used in the treatment of tuberculosis, against colds, fever, and, in general, respiratory ailments. It is said to be an antihelminthic and is used for that purpose. It is used against skin diseases like eczema and scabies. It is said to be effective for removing blotches from the face. To increase potentia virilis it is pounded well and added to various foods.”

In Indian medicine
Frequent references in the Vedas to nutmeg indicate that the ancient Hindus knew of the spice from early times. They described it as warmth-producing, stimulating, and good for digestion and also used it in their medicinal preparations. Martius [9] said that Hindu physicians prescribed it for headache, nerve fevers, cold fevers, foul breath, and intestinal weakness.

In his Materia Indica of 1826, Ainslie wrote that nutmeg “is considered by the natives of India as one of their most valuable medicines ….” Dymock, in 1883, noted that the Moslems of western India used nutmeg as an aphrodisiac. Burkill, in 1935, stressed nutmeg’s importance in Indian tonics for dysentery. According to an adviser in the Indian Ministry of Health, nutmeg is still used medicinally in India :

“It is prescribed as an analgesic in neuritic pains, as a sedative in highly tense nervous states, and as a sedative and anti-spasmodic in asthma. In view of its reaction resembling opium, it is used to give relief in the cough and hemoptysis of tuberculosis. In traditional Indian folk and domestic medicine, nutmeg is used in small quantities to induce hypnotic effect in irritable children. It is also administered as an hypnotic and sedative in epileptic convulsions.”

In Western medicine
Medieval European physicians followed exactly the precepts of Arabian medicine. Consequently, they called nutmeg a warm, dry drug and recommended it for all the maladies listed earlier. Warburg wrote :

“The importance of nutmeg as a medicine grew hand in hand with the increase in Indian trade during the middle ages; its use spread from the Arabian Empire over Greece and Italy and soon reached central Europe. Nutmeg gradually became a genuine folk remedy, although it was most important as a major ingredient in medicines prepared according to guild rules.”

During the 16th and 17th centuries, Western physicians compiled the writings of earlier authorities on nutmeg. This was the great period of the herbalists, and nearly every herbal contained a summary of nutmeg’s virtues .

Doctors continued for some time to prescribe Myristica for intestinal illnesses, but by 1800 they realized that any of its effects were the same as those of other aromatics. Then, as modern pharmacy developed, older remedies, nutmeg among them, were relegated to positions of lower and lower priority. In summarizing the medicinal uses of the spice in 1897, Warburg wrote :

“Today the employment of nutmeg and mace in medicine is relatively minor. Nutmeg is now used as a stomachic, stimulant, and carminative, especially in

cases of dyspepsia, intestinal catarrh and colic, and as an appetite stimulant, as well as for its ability to control flatulence….”

There is an important omission in the above catalogue of nutmeg uses: sometime later in its history-perhaps as late as the 19th century––nutmeg became known as an emmenagogue and abortifacient. This use has persisted among women into the present century; in fact, Green in 1959 reported the case of 28-year-old Virginia woman who ate “18.3 g of finely ground nutmeg in an attempt to induce the menses, which had been delayed two days”. Some of the older uses of the drug may also be alive in contemporary European and American folk beliefs: McCord [15] , for example, cited a 1962 incident in which a 41-year-old South Carolina man, on the advice of a friend, took two whole nutmegs to relieve a skin infection.

Myristica remained official in the United States Pharmacopeia through U. S. P. XIII (1947). Myristica oil was kept on for several more editions, principally as a flavouring agent, but was finally dropped from U. S. P. XVII (1965).

The relevance of medicinal uses of nutmeg to the present discussion of nutmeg as a narcotic is that the toxic properties of Myristica must first have been noticed when patients accidentally took overdoses.

Pharmacology of nutmeg:
Early studies
The first pharmacological experiments on nutmeg were performed by van Leeuwenhoek, the Dutch microscopist, around 1676.

As late as 1900, little was known about the action of Myristica, largely because researchers could not agree on which component of the seed contained the active principle.

Reviewing the findings of earlier workers, Shulgin in 1963 [22] wrote that the myristicin fraction of nutmeg oil “is strongly suspect of representing the effective toxic factor for cats …. “but that it appears “ineffective in duplicating the psychological effects of total nutmeg in man “. He then speculated on possible pharmacological activity of other components of the oil:

“The minor aromatic ethers, eugenol and safrol, have been suggested as possible active components. This seems unlikely, as the amounts ingested from a 5 g nutmeg (0.001 g and 0.003 g respectively) are much below the usual therapeutic levels of these substances (3.0 ml and 0.5 ml respectively). The only component, aside from the myristicin fraction, of the volatile oil from nutmeg that deserves serious consideration as an active agent is the pinenedipentene fraction. Many descriptions of the toxic syndromes of representative terpene medicines parallel the common toxic manifestations of nutmeg (i.e., nausea, cyanosis, stupor, cold extremities, often delirium). [However] actual toxic dosages of oils that are of make-up similar to the hydrocarbon fraction of nutmeg (such as oil of turpentine) are as a rule 20 to 60 times higher than that which would be encountered in nutmeg intoxication.”

Shulgin’s conclusion is the best summary of our present knowledge of Myristica; “As yet, no known pharmacology of any known component of oil of nutmeg can explain the syndrome of the whole nutmeg.”

Risks and toxicity:
In low doses, nutmeg produces no noticeable physiological or neurological response. Large doses of 30 g or more are dangerous, potentially inducing convulsions, palpitations, nausea, eventual dehydration, and generalized body pain. In amounts of 5–20 g it is a mild to medium hallucinogen, producing visual distortions and a mild euphoria. It is a common misconception that nutmeg contains monoamine oxidase inhibitors (MAOIs). This is untrue; nutmeg should not be taken in combination with MAOIs but it does not contain them . A test was carried out on the substance which showed that, when ingested in large amounts, nutmeg takes on a similar chemical make-up to MDMA (ecstasy). However, use of nutmeg as a recreational drug is unpopular due to its unpleasant taste and its side effects, including dizziness, flushes, dry mouth, accelerated heartbeat, temporary constipation, difficulty in urination, nausea, and panic. A user will not experience a peak until approximately six hours after ingestion, and effects can linger for up to three days afterwards.

A risk in any large-quantity (over 25 g) ingestion of nutmeg is the onset of ‘nutmeg poisoning’, an acute psychiatric disorder marked by thought disorder, a sense of impending death, and agitation. Some cases have resulted in hospitalization.

The use of nutmeg as a psychotropic agent:
Since all aromatic spices contain volatile compounds that affect the central nervous system, these alleged properties of familar substances are plausible. It is interesting that the narcotics-user believes different spices capable of providing different experiences- nutmeg can be “horrible” or ginger “dangerously potent “. Pharmacologists agree that psychological expectations largely determine the form of a narcotic intoxication. Consequently, a person expecting horrible effects from nutmeg may well experience them. This may explain why women poisoned accidentally by nutmeg merely become stuporous, while prisoners have predominantly pleasant times under Myristica; prisoners take the spice to escape reality, and they expect it to be much like Cannabis.

A growing problem in the United States is the use of hallucinogenic drugs like LSD and marihuana by young persons, especially students in secondary schools and universities . There is some evidence that these people also try self-experiments with nutmeg.

Callaway maintains that jazz musicians “have known about nutmeg for some time but will not discuss it except with friends “. Most bohemians, addicts and students who try the spice probably are equally secretive.

Experimentation with nutmeg may be widespread on American university campuses. In the summer 1964 issue of a University of Mississippi student magazine, an article titled “Nutmeg Jag” described a nutmeg party attended by eight persons.

Like prisoners, students who use marihuana may often turn to nutmeg when cut off from supplies of Cannabis. But it would seem that marihuana is obtainable with minimum difficulty around most US universities today, and there is no doubt students (like prisoners) prefer Cannabis to Myristica.

As a final word on the uses of nutmeg, there is the report that the practice of taking this spice to produce “a syndrome comparable to alcoholic inebriety” is “not uncommon among alcoholics who are deprived of alcohol.

Spice Description:
Star anise is the unusual fruit of a small oriental tree. It is, as the name suggests, star shaped, radiating between five and ten pointed boat-shaped sections, about eight on average. These hard sections are seed pods. Tough skinned and rust coloured, they measure up to 3cm (1-1/4”) long. The fruit is picked before it can ripen, and dried. The stars are available whole, or ground to a red-brown powder.
Bouquet: Powerful and liquorice-like, more pungent and stronger than anise.
Flavour: Evocative of a bitter aniseed, of which flavour star anise is a harsher version. Nervertheless, the use of star anise ensures an authentic touch in the preparation of certain Chinese dishes.

Star anise is a spice that closely resembles anise in flavor, obtained from the star-shaped pericarp of Illicium verum, a small native evergreen tree of southwest China. The star shaped fruits are harvested just before ripening. It is widely used in Chinese cuisine, in Indian cuisine where it is a major component of garam masala, and in Malay/Indonesian cuisine. It is widely grown for commercial use in China, India, and most other countries in Asia. Star anise is an ingredient of the traditional five-spice powder of Chinese cooking. It is also one of the ingredients used to make the broth for the Vietnamese noodle soup called ph?. It is used as a spice in preparation of Biryani in Andhra Pradesh, a south Indian State.

Medicinal Properties:
Like anise, star anise has carminative, stomachic, stimulant and diuretic properties. In the East it is used to combat colic and rheumatism. It is a common flavouring for medicinal teas, cough mixtures and pastilles.

Medicinal uses:
Star anise has been used in a tea as a remedy for colic and rheumatism, and the seeds are sometimes chewed after meals to aid digestion.

Shikimic acid, a primary feedstock used to create the anti-flu drug Tamiflu, is produced by most autotrophic organisms, but star anise is the industrial source. In 2005, there was a temporary shortage of star anise due to its use in making Tamiflu. Late in that year, a way was found of making shikimic acid artificially. A drug company named Roche now derives some of the raw material it needs from fermenting E. coli bacteria. There is no longer any shortage of star anise and it is readily available and is relatively cheap.

Star anise is grown in four provinces in China and harvested between March and May. The shikimic acid is extracted from the seeds in a ten-stage manufacturing process which takes a year. Reports say 90% of the harvest is already used by the Swiss pharmaceutical manufacturer Roche in making Tamiflu, but other reports say there is an abundance of the spice in the main regions – Fujian, Guangdong, Guangxi and Yunnan.

Japanese star anise (Illicium anisatum), a similar tree, is not edible because it is highly toxic; instead, it has been burned as incense in Japan. Cases of illness, including “serious neurological effects, such as seizures”, reported after using star anise tea may be a result of using this species. Japanese star anise contains anisatin, which causes severe inflammation of the kidneys, urinary tract and digestive organs.

Culinary Uses:
Star anise is used in the East as aniseed is in the West. Apart from its use in sweetmeats and confectionery, where sweeteners must be added, it contributes to meat and poultry dishes, combining especially well with pork and duck. In Chinese red cooking, where the ingredients are simmered for a lengthy period in dark soy sauce, star anise is nearly always added to beef and chicken dishes. Chinese stocks and soups very often contain the spice.. It flavours marbled eggs, a decorative Chinese hors d’oeuvre or snack. Mandarins with jaded palates chew the whole dried fruit habitually as a post-prandial digestant and breath sweetener – an oriental comfit. In the West, star anise is added in fruit compotes and jams, and in the manufacture of anise-flavoured liqueurs, the best known being anisette. It is an ingredient of the mixture known as “Chinese Five Spices”.

Star anise contains anethole, the same ingredient which gives the unrelated anise its flavor. Recently, star anise has come into use in the West as a less expensive substitute for anise in baking as well as in liquor production, most distinctively in the production of the liquor Galliano. It is also used in the production of Sambuca, pastis, and many types of absinthe.

Habitat:The Citron’s place of origin is unknown but seeds were found in Mesopotamian excavations dating back to 4000 B.C.
Spaniards probably brought the Citron with other Citrus species to St. Augustine in Florida but it survived there only in greenhouses. Today the Citron is grown in southern Florida only occasionally as a curiosity. Citron trees are not uncommon in some of the Pacific Islands but are rare in the Philippines.

Description:-
Citron is a slow-growing shrub or small tree reaching up to 15 ft (4.5 m) in height with stiff branches and twigs and spines in the leaf axils.
The evergreen leaflets are leathery, lemon-scented, ovate-lanceolate or ovate elliptic. The flower buds are large and white or purplish. The fragrant flowers have 4 to 5 petals and they are pinkish or purplish with 30 to 60 stamens. The fruit is fragrant, oblong or oval and very variable even on the same branch. The peel is yellow, usually rough and bumpy and very thick. The pulp is pale-yellow or greenish divided into as many as 14 or 15 segments, firm, not very juicy, acid or sweet and contains numerous seeds.

Cultivation and uses:-
The citron fruit is slow-growing. The citron tree is typically grown from cuttings that are two to four years old; the tree begins to bear fruit when it is around three years old. The fruit is oblong in shape, and sometimes as much as six inches in length. Its skin is thick, somewhat hard, fragrant, and covered with protuberances; the pulp is white and subacid.

In Pliny’s time the fruit was never eaten (it began to be used in cooking by the early 2nd century), but its intense perfume was used, penetrating clothes to repel noxious insects (compare Citronella).

In Hebrew, the citron is known as the etrog (Hebrew: ???????). It is one of the Four Species used during the holiday of Sukkot each fall. The role of the citron in that holiday was portrayed in the Israeli movie Ushpizin. Citrons that have been bred with lemon (in order to increase output per tree and make the tree less fragile) are not kosher for use as part of the Four Species.

In South Indian cuisine, especially tamil cuisine, citron is widely used in pickles and preserves. In Tamil, the unripe fruit is referred to as ‘narthangai’, which is usually salted and dried to make a preserve. The tender leaves of the plant are often used in conjunction with chili powder and other spices to make a powder, called ‘narthellai podi’, literally translating to ‘powder of citron leaves’. Both narthangai and narthellai podi are usually consumed with thayir sadam.

In Korea, it is used to create a syrupy tea (called Yuja cha) where the slices of whole fruit are eaten with the sweet tea. The fruit is thinly sliced (peel, pith and pulp) and soaked or cooked in honey or sugar to create a chunky syrup. This syrupy candied fruit is mixed with hot water as a fragrant tea, where the fruit at the bottom of the cup is eaten as well. Often perserved in the syrup for the cold months, Yuja tea served as a source of fruit in winter.

Food Uses:
The most important part of the Citron is the peel, which is a fairly important article in international trade.
The candied peel is sun-dried or put up in jars for future use. Candying is done mainly in England, France and the United States. The candied peel is widely employed in the food industry, especially as an ingredient in fruitcake, plum pudding, buns, sweet rolls and candy. In Guatemala, Citron is used as flavoring for carbonated soft drinks. In Malaya, Citron juice is used as a substitute for the juice of imported, expensive lemons. A product called “Citron Water” is made in Barbados and shipped to France for flavoring wine and vermouth.
In Spain, syrup made from the peel is used to flavor unpalatable medical preparations. If the citron lacks flavor, a few orange or lemon leaves can be added to the syrup

Indigenous Practices:
Chinese and Japanese people prize the Citron for its fragrance. It is a common practice in central and northern China to carry a ripe fruit in the hand or place a fruit in a dish on a table to perfume the air of a room.
The dried fruits are put with stored clothing to repel moths. In southern China, the juice is used to wash fine linen.
In some of the South Pacific islands a fragrant oil call “Cedrat Petitgrain Oil” is distilled from the leaves and twigs of Citron trees for the French perfume industry. The flowers have also been distilled for essential oil however this oil has limited use in scent manufacturing.
Branches of the Citron tree are used as walking sticks in India. The wood is white, hard and heavy, and of fine grain. In India, it is also used for agricultural implements.

Medicinal Uses:
In ancient times and in the Middle Ages, the “Ethrog” was employed as a remedy for seasickness, pulmonary troubles, intestinal ailments and other disorders.
Citron juice with wine was considered an effective purgative to clean the system of poison. In India, the peel is a remedy for dysentery. The distilled juice is given as a sedative. The candied peel is sold in China as a stimulant, expectorant and tonic. In West Tropical Africa, the citron is used only as a medicine, against rheumatism. In Malaya, a decoction of the fruit is taken to drive off evil spirits. In Panama, they are ground up and combined with other ingredients and given as an antidote for poison. The essential oil of the peel is regarded as an antibiotic.

Description:Coriander is an annual herb . It is a soft, hairless plant growing to 50 cm (20 in) tall. The leaves are variable in shape, broadly lobed at the base of the plant, and slender and feathery higher on the flowering stems. The flowers are borne in small umbels, white or very pale pink, asymmetrical, with the petals pointing away from the centre of the umbel longer (5–6 mm) than those pointing towards it (only 1–3 mm long). The fruit is a globular, dry schizocarp 3–5 mm (0.12–0.20 in) in diameter.

First attestick to see ed in English late 14th century, the word coriander derives from the Old French coriandre, which comes from Latin coriandrum, in turn from Greek  (koriannon). The earliest attested form of the word is the Mycenaean Greek ko-ri-ja-da-na  (written in Linear B syllabic script, reconstructed as koriadnon), similar to the name of Minos’s daughter Ariadne, which later evolved to koriannon or koriandron.

Cilantro is the Spanish word for coriander, also deriving from coriandrum. It is the common term in North America for coriander leaves, due to their extensive use in Mexican cuisine.

Edible Uses:
All parts of the plant are edible, but the fresh leaves and the dried seeds are the parts most traditionally used in cooking. Coriander is common in South Asian, Southeast Asian, Middle Eastern, Central Asian, Mediterranean, Indian, Tex-Mex, Latin American, Portuguese, Chinese, African, and Scandinavian cuisine.

The leaves are variously referred to as coriander leaves, fresh coriander, Chinese parsley, or cilantro (particularly in North America).

It should not be confused with culantro (Eryngium foetidum L.) which is a close relative to coriander (Coriandrum sativum L.) but has a distinctly different appearance, a much more potent volatile leaf oi  and a stronger smell.

Leaves:
The leaves have a different taste from the seeds, with citrus overtones. However, many people experience an unpleasant “soapy” taste or a rank smell and avoid the leaves.[8][9] The flavours have also been compared to those of the stink bug, and similar chemical groups are involved (aldehydes). There appears to be a genetic component to the detection of “soapy” versus “herby” tastes.

The fresh leaves are an ingredient in many South Asian foods (such as chutneys and salads), in Chinese dishes, in Mexican cooking, particularly in salsa and guacamole and as a garnish, and in salads in Russia and other CIS countries. Chopped coriander leaves are a garnish on Indian dishes such as dal. As heat diminishes their flavour, coriander leaves are often used raw or added to the dish immediately before serving. In Indian and Central Asian recipes, coriander leaves are used in large amounts and cooked until the flavour diminishes. The leaves spoil quickly when removed from the plant, and lose their aroma when dried

Fruits:
The dry fruits are known as coriander or coriandi seeds. In India they are called dhania. The word “coriander” in food preparation may refer solely to these seeds (as a spice), rather than to the plant. The seeds have a lemony citrus flavour when crushed, due to terpenes linalool and pinene. It is described as warm, nutty, spicy, and orange-flavoured.

The variety C. s. vulgare has a fruit diameter of 3–5 mm (0.12–0.20 in), while var. microcarpum fruits have a diameter of 1.5–3 mm (0.059–0.12 in). Large-fruited types are grown mainly by tropical and subtropical countries, e.g. Morocco, India and Australia, and contain a low volatile oil content (0.1-0.4%). They are used extensively for grinding and blending purposes in the spice trade. Types with smaller fruit are produced in temperate regions and usually have a volatile oil content of around 0.4-1.8%, so are highly valued as a raw material for the preparation of essential oil.

It is commonly found both as whole dried seeds and in ground form. Seeds can be roasted or heated on a dry pan briefly before grinding to enhance and alter the aroma. Ground coriander seed loses flavour quickly in storage and is best ground fresh.

Coriander seed is a spice in garam masala and Indian curries, which often employ the ground fruits in generous amounts together with cumin. It acts as a thickener. Roasted coriander seeds, called dhana dal, are eaten as a snack. It is the main ingredient of the two south Indian dishes: sambhar and rasam. Coriander seeds are boiled with water and drunk as indigenous medicine for colds.

Outside of Asia, coriander seed is used for pickling vegetables, and making sausages in Germany and South Africa (see boerewors). In Russia and Central Europe, coriander seed is an occasional ingredient in rye bread as an alternative to caraway. Coriander seeds are used in European cuisine today, though they were more important in former centuries.[citation needed] The Zuni people have adapted it into their cuisine, mixing the powdered seeds ground with chile and using it a condiment with meat, and eating leaves as a salad.

Coriander seeds are used in brewing certain styles of beer, particularly some Belgian wheat beers.   The coriander seeds are used with orange peel to add a citrus character.

Cilantro (leaves)and Coriander (seeds) and are names for different parts of the same plant, Coriandrum sativum, a naturally healing food in both forms. Cilantro is an excellent culinary herb that adds flavor to foods and improvse digestion. There are both scientific studies, and anecdotal evidence to support cilantro’s reputation as a powerful depurative.. The herb may also have a protective effect when cooked and eaten with fish and other foods that may be contaminated with heavy metals.

Coriander, like many spices, contains antioxidants, which can delay or prevent the spoilage of food seasoned with this spice. A study found both the leaves and seed to contain antioxidants, but the leaves were found to have a stronger effect.

Chemicals derived from coriander leaves were found to have antibacterial activity against Salmonella choleraesuis, and this activity was found to be caused in part by these chemicals acting as nonionic surfactants.

Coriander has been used as a folk medicine for the relief of anxiety and insomnia in Iran.  Coriander seeds are used in traditional Indian medicine as a diuretic by boiling equal amounts of coriander seeds and cumin seeds, then cooling and consuming the resulting liquid. In holistic and traditional medicine, it is used as a carminative and as a digestive aid.

Coriander has been documented as a traditional treatment for type 2 diabetes. A study on mice found coriander extract had both insulin-releasing and insulin-like activity.

Coriander seeds were found in a study on rats to have a significant hypolipidaemic effect, resulting in lowering of levels of total cholesterol and triglycerides, and increasing levels of high-density lipoprotein. This effect appeared to be caused by increasing synthesis of bile by the liver and increasing the breakdown of cholesterol into other compounds.

Coriander leaf was found to prevent deposition of lead in mice, due to a presumptive chelation of lead by substances in the plant.

The essential oil produced from Coriandrum sativum has been shown to exhibit antimicrobial effects.

The name curry plant is often used for Helichrysum italicum (Asteraceae), a relative of immortelle; several subspecies grow in the European Mediterranean countries. The essential oil shows considerable infraspecific variation; its main components are monoterpene hydrocarbons (pinene, camphene, myrcene, limonene) and monoterpene-derived alcohols (linalool, terpinene-4-ol, nerol, geraniol, also their acetates); further important aroma components are nonterpenoid acyclic β-ketones, which give rise to a somewhat disagreeable flavour (e.g., 2,5,7-trimethyldec-2-en-6,8-dione, 2,5,7,9-tetramethyldec-2-en-6,8-dione, 2,5,7,9-tetramethylhendec-2-en-6,8-dione, 3,5-dimethyloctan-4,6-dione, 2,4-dimethylheptan-3,5-dione).

Description:
It is a small tree, growing 4-6 m tall, with a trunk up to 40 cm diameter. The leaves are pinnate, with 11-21 leaflets, each leaflet 2-4 cm long and 1-2 cm broad. They are highly aromatic. The flowers are small white, and fragrant. The small black, shiny berries are edible, but their seeds are poisonous.

The species name commemorates the botanist Johann König.

Uses:
The leaves are highly valued as seasoning in South Indian and Sri Lankan cooking, much like bay leaves and especially in curries with fish or coconut milk[citation needed]. They are also used as an ingredient in the popular marathi dish karhi. In their fresh form, they have a short shelf life though they may be stored in a freezer for quite some time; however, this can result in a loss of their flavour[original research?]. They are also available dried, though the aroma is much inferior.

The leaves of Murraya koenigii are also used as a herb in Ayurvedic medicine. Their properties include much value as an antidiabetic, antioxidant,  antimicrobial, anti-inflammatory, hepatoprotective, anti-hypercholesterolemic etc. Curry leaves are also known to be good for hair, for keeping them healthy and long[citation needed].

Although most commonly used in curries, leaves from the Curry Tree can be used in many other dishes to add spice.

Propagation:
Seeds must be planted fresh; dried or shriveled fruits are not viable. Plant either the whole fruit (or remove the pulp) in potting mix and keep moist but not wet.
Sensory quality:
Fresh and pleasant, remotely reminiscent of tangerines.

Main constituents:
Fresh leaves are rich in an essential oil, but the exact amount depends besides freshness and genetic strain also on the extraction technique. Typical figures run from 0.5 to 2.7%.

The following aroma components have been identified in curry leaves of Sri Lanka (in parentheses, the content in mg/kg fresh leaves): β-caryophyllene (2.6 ppm), β-gurjunene (1.9), β-elemene (0.6), β-phellandrene (0.5), β-thujene (0.4), α-selinene (0.3), β-bisabolene (0.3), furthermore limonene, β-trans-ocimene and β-cadinene (0.2 ppm). Newer work has shown a large variability of the composition of the essential oil of curry leaves. In North Indian plants, monoterpenes prevail (β-phellandrene, α-pinene, β-pinene), whereas South Indian samples yielded sesquiterpenes: β-caryophyllene, aromadendrene, α-selinene. Sometimes, one even hears about Ethiopian (see long pepper) or Caribbean “curries”, whatever this may mean (except, perhaps, the least common denominator of all those: Spiciness).

Medicinal Uses:-

Said to be tonic and stomachic.  In India, the young leaves are taken for dysentery and diarrhea.   The leaves and the stem are used as a tonic, stimulant and carminative.   An infusion of the toasted leaves is anti-emetic.  A paste of the bark and roots is applied to bruises and poisonous bites.  The seeds are used to make a medicinal oil called ‘zimbolee oil.’  Fresh juice of the leaves mixed with lemon juice and sugar is prescribed for digestive disorders, and eating 10 curry leaves every morning for 3 months is thought to cure hereditary diabetes.  A few drops of the juice are believed to keep eyes bright.  A liberal intake of curry leaves impedes premature greying of the hair.  The leaves, boiled in coconut oil, are massaged into the scalp to promote hair growth and retain color.  The leaves may also be used as a poultice to help heal burns and wounds.  Juice from the berries may be mixed with lime juice and applied to soothe insect bites and stings.

Curry leaves possess the qualities of herbal tonic.They strengthen the functions of stomach. and promots its action.They are also used as a mild laxative.The leaves may be taken mixed with other mild testing herbs. The juice extracted from 15 grams of leaves may be taken with buttermilk.

Digestive Disorders:
Fresh juice of curry leaves and sugar,is an effective medicine for morning sickness,vomiting and nausea due to indigestion and excessive use of fats.One or two teaspoon of juice leaves mixed with teaspoon of lime juice may be taken in these conditions.The curry leaves ground to a fine paste and mixed with buttermilk can be taken in an empty stomach with beneficial results in case of stomach upsets.

Tender curry leaves are used in diarrhoea,dysentry and piles.They should be taken mixed with honey.The bark of the tree is also useful in bilious vomiting.A teaspoon of powder or decoction of the dry bark should be given with cold water in this condition.

Diabetes: Eating 10 fresh fully grown curry leaves every morning for three months is said to prevent diabetes due to heredity factors. It can cure diabetes due to obesity as the leaves have weight reducing properities.

Kidney Disorders:The root of the curry plant also has medicinal properities.The juice of the root can be taken to relieve pain associated with kindeys.

Premature Greying of Hair: Liberal intake of curry leaves is considered beneficial in preventing premature greying of hairs.These leaves have the properity of naurishing the hair roots.New hair roots that grow are healther with normal pigments.The leaves can be used in the form of CUTNEY or the juice may be squeezed and taken in buttermilk or lassi.

Burns and Bruises:
Curry leaves can be effectively used to treat burns,bruises and skin eruptions.They should be applied as a poultice over the affected areas.

Eye Disorders:
Fresh juice of curry leaves suffused in the eyes makes them look bright.It also prevents the early development of cataract.

The leaves of this member of the citrus family are responsible for the distinctive lime-lemon aroma and flavour that are an indispensable part of Thai and, to a lesser extent, Indonesian cooking.

Description:
The leaves of the kaffir lime tree are a dark green color with a glossy sheen. They come in two parts: the top leaflet is lightly pointed at its tip and is attached to another leaflet beneath that is broader on its upper edge. The size of the leaves can vary quite a bit, from less than an inch to several inches long.

The fruit is dark green and round, with a distinct nipple on the stem end. It has a thick rind, knobby and wrinkled, and one of its common names is ‘porcupine orange’. As the fruit becomes older, the color fades to a lighter, yellowish green. Though the juice is infrequently use in cooking, the zest of the rind is often used for making curry pastes.
The leaves and rind have a perfume unlike any other citrus, sometimes called mysterious or haunting. There is a combined lemon/lime/madarin aroma but clearly an identity of its own.

Culinary Uses
Kaffir lime leaves are precious to many Thai dishes, from soups and salads to curries and stir-fried dishes. They blend blend with lemon grass and lime juice in tom yam to give the soup its wholesome lemony essence. In soupy dishes, add the leaves whole or torn into smaller pieces, using them as one would bay leaves to flavour broth or stew.

Salads or garnishes require fresh leaves. Dried leaves cannot be substituted. The leaves, when young and tender, are finely shredded and added to salads and sprinkled over curries for a burst of flavour. Being rather thick, they must be cut very fine, like threads, and the thick mid-rib removed. To sliver kaffir lime leaves finely, stack three to four leaves of similar size together and slice them very thinly with a sharp knife. It is faster to cut diagonally , which gives the hands better leverage, or roll a few leaves at a time into a tight roll before slicing. If fresh kaffir lime leaves are not available, use the tender new leaves of lime, lemon or grapefruit. They won’t have the same fragrance but are preferable to using dried kaffir lime leaves in some dishes.

When making a soup or stock, whole fresh or dried leaves may be added, as they are removed after cooking. Finely chopped fresh or crumbled dry kaffir lime leaves are used in dishes like tom yum, strir fries and curries, especially those containing coconut cream. The flavour also combines well with basil, cardamom, chiles, cilantro, cumin, curry leaves, lemon grass, galangal, ginger, mint, tamarind, turmeric and coconut milk.

Though the juice is seldom used in cooking, the peel of the fruit, with its high concentration of aromatic oils, is indispensable in many curry pastes and is one reason why Thai curries taste refreshingly unique. The zest also imparts a wonderful piquant flavour to such delectable favorites as fried fish cakes, and it blends in powerfully with such spicy, chile-laden stews as “jungle soup” (gkaeng bpah). Because it’s strong flavour can over power the more subtle ones in a dish, the rind should be used sparingly, grated or chopped finely and reduced in a mortar with other paste ingredients until indistinguishable..

Kaffir lime is used extensively in Thai cooking. Both the zest and leaves are very useful. The fruit looks like wrinkled lime, big wrinkles. Thai people believed the juice is excellent hair rinse to prevent hair from falling out. The zest of the lime is an ingredient in red curry paste.

The juice is rarely used in Thai cooking, but the zest is common.

Recently, Thai growers have developed and started growing a kaffir lime without wrinkles that is easier to pack and ship around the world.
The leaf look like any citrus leaf, but it has two connecting leaves. I often call it the double leaf. Many recipes calls for its leaves. If the leaf is used whole, in soup, most people do not eat the leaf itself. The only time the leaf is eaten is when it sliced very thin for recipes like Tod Mun.

Medicinal Properties
The citrus juice used to be included in Thai ointments and shampoos, and in tonics in Malaysia. Kaffir lime shampoo leaves the hair squeaky clean and invigorates the scalp. Kaffir lime has also been used for ages as a natural bleach to remove tough stains.

The essential oils in the fruit are incorporated into various ointments, and the rind is an ingredient in medical tonics believed to be good for the blood. Like lemon grass and galangal, the rind is also known to have beneficial properties for the digestive system.

In folk medicine, the juice of kaffir lime is said to promote gum health and is recommended for use in brushing teeth and gums. It is believed to freshen one’s mental outlook and ward off evil spirits

The leaves can be used fresh or dried, and can be stored frozen.

The juice and rinds of the kaffir lime are used in traditional Indonesian medicine; for this reason the fruit is sometimes referred to in Indonesia as jeruk obat – literally “medicine citrus”. The oil from the rind has strong insecticidal properties.

The zest of the fruit is widely used in creole cuisine and to impart flavor to “arranged” rums in the Réunion island and Madagascar.

Storage
The leaves may be recognized by their distinctive two sections. For simmering in soups or curries the leaves are used whole. Frozen or dried leaves may be used for simmering if fresh leaves are not available. The finely grated rind of the lumpy-skinned fruit has its own special fragrance. If you can obtain fresh kaffir limes, they freeze well enclosed in freezer bags and will keep indefinitely in that state. Just grate a little rind off the frozen lime and replace lime in freezer until next required. The leaves freeze well too. dried kaffir lime leaves should be green, not yellow, and are best kept under the same conditions as other dried herbs. They will keep for about 12 months in an airtight pack, out of light, heat and humidity.

Curare grows as a large liana, or vine, found in the canopy of the South American rainforest. The vine may get as thick as 4 inches in diameter at its base. It has large alternate, heart-shaped leaves which may be 4-8 inches long and almost as wide, with a 2-6 inches long petiole. The leaves are smooth on top with a hairy white bottom, and deeply indented veins radiating from the leaf base. Clusters of small (1/16-1/8 inches), greenish-white flowers are made up of separate male and female flowers. The fleshy fruits are oval, narrow at the base, and approximately 1-2 mm long.

Uses:

The fruit of this vine is edible with a bitter-sweet taste.
Some Indians of South America crush and cook the roots and stems, and add other plants and venomous animals, mixing it until it becomes a light syrup. They call this mixture “ampi”, or “curaré”, which they use on the tip of their arrows and darts to hunt wild game. Crude curare is a dark brown or black mass with a sticky to hard consistency and an aromatic, tarry odor. The name comes from Indian word meaning “poison.”

Curare, in large doses, paralyses the motor nerve-endings in striped muscle, and death occurs from respiratory failure. Curare is very bitter, and is actually a common name for various dart poisons originating from South America.

The young flowers and new growth are added to soups and other food preparations as a soporific vegetables.

Curare has differing effects depending upon dosage, whether it is injected into muscle tissue, or ingested. Curare is used internally in tribal medicine for edema, fever, kidney stones and testicular inflammation. It is also known to relax muscles into a state of inactivity.

Under appropriate medical care and attention, curare is also used to relieve spastic paralysis, to treat some mental disorders, and to induce muscle relaxation for setting fractures. Curare is now used extensively in modern medicine. It is only toxic if it enters the bloodstream. Curare is not for sale to the general public.

As with many Amazonian tribal plant history and legend, curare is prepared by old women. In some traditions, the witch doctor has a monopoly of the business, but generally, wise old men get together to brew a batch. Extra curare was usually carried by tribal members in a gourd or calabash, and stored with weapons.

Medicinal Uses:

The active ingredient in “curaré”, D-tubocurarine, is used in medicine. Brazilians consider the root a diuretic, and use it internally in small quantities for madness and dropsy, and externally for bruises. It is also used for edema, fever, and kidney stones.

Curare is an alkaloid, and acts as a neuromuscular blocking agent to produce paralysis in muscles. It first affects the muscles of the toes, ears, and eyes, then those of the neck, arms and legs, and finally, those involved in breathing. In fatal doses, death is caused by respiratory paralysis. Curare must get into the blood system for it to work. It doesn’t hurt to eat something killed by a poisoned curare arrow, for instance.

The therapeutical employment of curare has been suggested in certain severe and obstinate spasmodic affections, as in epilepsy, chorea, hydrophobia, and, more particularly, in tetanus. It is used by subcutaneous injections of its filtered aqueous solution, thus: Add curare 1 grain, to distilled water 24 minims; dissolve, let the solution stand 48 hours, and filter; of this, from 2 minims (1/12 grain) to 6 minims (1/4 grain) may be used at one injection, carefully repeating the injections until relaxation of the muscles has been effected. Curarine, dissolved in water, with a few drops of sulphuric acid added, to facilitate its solution, is to be used in still smaller doses—from the 1/240 to the 1/120 part of a grain. It is doubtful whether this agent will ever come into general use as a medicinal remedy; at least, not so long as other medicines are known in which greater confidence can be placed. The diversity of action, attributable, in some instances, to its difference of composition, in others to its inertness, or to its highly active qualities, render it an uncertain, as well as an unsafe, remedy.

It is used in modern medicine primarily as an auxiliary in general anesthesia, frequently with cyclopropane, especially in abdominal surgery. Upon injection, curare acts as a neuromuscular blocking agent to produce flaccidity in striated (striped) muscle (it competes with acetylcholine at the nerve ending, preventing nerve impulses from activating skeletal, or voluntary, muscles). It first affects the muscles of the toes, ears, and eyes, then those of the neck and limbs, and, finally, those involved in respiration. In fatal doses, death is caused by respiratory paralysis.

The familiar clove used in the kitchen is the dried flower bud. The fruit is a one- or two-seeded berry.

The clove tree is endemic in the North Moluccas (Indonesia) and was of old cultivated on the islands of Ternate, Tidore, Bacan and the West coast of Halmahera. Uses:
Cloves can be used in cooking either whole or in a ground form, but as they are extremely strong, they are used sparingly.

Cloves have historically been used in Indian cuisine (both North Indian and South Indian). In North Indian cuisine, it is used in almost all rich or spicy dishes as an ingredient of a mix named garam masala, along with other spices, although it is not an everyday ingredient for home cuisine, nor is it used in summer very often. In the Maharashtra region of India it is used sparingly for sweet or spicy dishes, but rarely in everyday cuisine. In Ayurvedic medicine it is considered to have the effect of increasing heat in system, hence the difference of usage by region and season. In south Indian cuisine, it is used extensively in biryani along with “cloves dish” (similar to pilaf, but with the addition of other spices), and it is normally added whole to enhance the presentation and flavor of the rice.

Dried cloves are also a key ingredient in Indian masala chai, spiced tea, a special variation of tea popular in some regions, notably Gujarat. In the US, it is often sold under the name of “chai” or “chai tea”, as a way of differentiating it from other types of teas sold in the US.

In Mexican cuisine, cloves are best known as ‘clavos de olor’, and often used together with cumin and cinnamon.

In Vietnamese cuisine, cloves are often used to season the broth of Pho.

Due to the Indonesian influence, the use of cloves is widespread in the Netherlands. Cloves are used in cheeses, often in combination with cumin. Cloves are an essential ingredient for making Dutch speculaas. Furthermore, cloves are used in traditional Dutch stews like hachee.

Non-culinary uses:
The spice is used in a type of cigarette called kretek in Indonesia. Kreteks have been smoked throughout Europe, Asia and the United States. In 2009, clove cigarettes (as well as fruit and candy flavored cigarettes) were outlawed in the US. However, they are still sold in similar form, re-labeled as “filtered clove cigars.”

Cloves are also an important incense material in Chinese and Japanese culture. And clove essence is commonly used in the production of many perfumes.

During Christmas, it is a tradition in some European countries to make pomanders from cloves and oranges to hang around the house. This spreads a nice scent throughout the house and acts as holiday decorations.

Cloves are often used as incense in the Jewish practice called Havdala

Clove oil anesthesia and overdose is considered a humane method for euthanizing fish.

Constituents:
Eugenol comprises 72-90% of the essential oil extracted from cloves, and is the compound most responsible for the cloves’ aroma. Other important essential oil constituents of clove oil include acetyl eugenol, beta-caryophyllene and vanillin; crategolic acid; tannins, gallotannic acid, methyl salicylate (painkiller); the flavonoids eugenin, kaempferol, rhamnetin, and eugenitin; triterpenoids like oleanolic acid, stigmasterol and campesterol; and several sesquiterpenes.

Eugenol has pronounced antiseptic and anaesthetic properties. Of the dried buds, 15 – 20 percent is essential oils, and the majority of this is eugenol. A kilogram (2.2 lbs) of dried buds yields approximately 150 ml (1/4 of pint) of eugenol.

Eugenol can be toxic in relatively small quantities—as low as 5 ml.

Medicinal Uses:
Traditional Chinese physicians have long used the herb to treat indigestion, diarrhea, hernia, and ringworm, as well as athlete’s foot and other fungal infections.  India’s traditional Ayurvedic healers have used clove since ancient times to treat respiratory and digestive ailments.  America’s 19th century Eclectic physicians used clove to treat digestive complaints and added it to bitter herb-medicine preparations to make them more palatable.  The Eclectics were also the first to extract clove oil from the herbal buds. It has antiseptic, stimulant, stomachic and digestive properties.  As an anti-infectant, cloves are effective against coli bacilli, streptococci, staphylococci, pneumococci and as an antimycotic.  The oil, too, is used in dentistry for its antiseptic and analgesic properties, and, like the whole cloves and powdered cloves, for local pain-relieving purposes.  Eugenol is a local anesthetic used in dental fillings and cements; a rubifacient and a carminative.  It is also an irritant and an allergic sensitizer.      Besides all their other uses, cloves can be used to treat acne, skin ulcers, sores, and styes.  They also make a potent mosquito and moth repellent which is where the clove studded orange pomander comes from.

Traditional medicinal uses:
Cloves are used in Indian Ayurvedic medicine, Chinese medicine, and western herbalism and dentistry, where the essential oil is used as an anodyne (painkiller) for dental emergencies. Cloves are used as a carminative, to increase hydrochloric acid in the stomach and to improve peristalsis. Cloves are also said to be a natural anthelmintic. The essential oil is used in aromatherapy when stimulation and warming are needed, especially for digestive problems. Topical application over the stomach or abdomen are said to warm the digestive tract. Clove oil, applied to a cavity in a decayed tooth, also relieves toothache. It also helps to decrease infection in the teeth due to its antiseptic properties.

In Chinese medicine cloves or ding xiang are considered acrid, warm and aromatic, entering the kidney, spleen and stomach meridians, and are notable in their ability to warm the middle, direct stomach qi downward, to treat hiccough and to fortify the kidney yang. Because the herb is so warming it is contraindicated in any persons with fire symptoms and according to classical sources should not be used for anything except cold from yang deficiency. As such it is used in formulas for impotence or clear vaginal discharge from yang deficiency, for morning sickness together with ginseng and patchouli, or for vomiting and diarrhea due to spleen and stomach coldness. This would translate to hypochlorhydria. Clove oil is used in various skin disorders like acne, pimples etc. It is also used in severe burns, skin irritations and to reduce the sensitiveness of skin.

Cloves may be used internally as a tea and topically as an oil for hypotonic muscles, including for multiple sclerosis. This is also found in Tibetan medicine. Some recommend avoiding more than occasional use of cloves internally in the presence of pitta inflammation such as is found in acute flares of autoimmune diseases.

In West Africa, the Yorubas use cloves infused in water as a treatment for stomach upsets, vomiting and diarrhea. The infusion is called Ogun Jedi-jedi.

Western studies have supported the use of cloves and clove oil for dental pain. However, studies to determine its effectiveness for fever reduction, as a mosquito repellent and to prevent premature ejaculation have been inconclusive. Clove may reduce blood sugar levels.

Description:
Brassica juncea is a Perennial herb, usually grown as an annual or biennial, up to 1 m or more tall; branches long, erect or patent; lower leaves petioled, green, sometimes with a whitish bloom, ovate to obovate, variously lobed with toothed, scalloped or frilled edges, lyrate-pinnatisect, with 1–2 lobes or leaflets on each side and a larger sparsely setose, terminal lobe; upper leaves subentire, short petioled, 30–60 mm long, 2–3.5 mm wide, constricted at intervals, sessile, attenuate into a tapering, seedless, short beak 5–10 mm long. Rooting depth 90–120 cm. Seeds about 5,660–6,000 per 0.01 kg (1/3 oz).

Edible Uses:
The leaves, the seeds (Raai in Gujarati), and the stem of this mustard variety are edible. The plant appears in some form in African, Italian, Indian, Chinese, Japanese, Korean, and soul food cuisine. Cultivars of B. juncea are grown as greens, and for the production of oilseed. In Russia, this is the main variety grown for production of mustard oil, which after refining is considered[according to whom?] one of the best vegetable oils. It is widely used in canning, baking and margarine production in Russia, and the majority of table mustard there is also made from this species of mustard plant.

The leaves are used in African cooking, and leaves, seeds, and stems are used in Indian cuisine, particularly in mountain regions of Nepal, as well as in the Punjab cuisine of India and Pakistan, where a famous dish called sarson da saag (mustard greens) is prepared. B. juncea subsp. tatsai, which has a particularly thick stem, is used to make the Indian pickle called achar, and the Chinese pickle zha cai. The mustard made from the seeds of the B. juncea is called brown mustard. The leaves & seeds (Raai in Gujarati)are used in many Indian dishes.

The Gorkhas of Darjeeling and Sikkim prepare pork with mustard greens (also called rayo in Nepali). It is usually eaten with relish with steamed rice, but could also be eaten with chapati (griddle breads).

Brassica juncea is more pungent than the closely related Brassica oleracea greens (kale, cabbage, collard greens, et cetera), and is frequently mixed with these milder greens in a dish of “mixed greens”, which may include wild greens such as dandelion. As with other greens in soul food cooking, mustard greens are generally flavored by being cooked for a long period with ham hocks or other smoked pork products. Mustard greens are high in vitamin A and vitamin K.

Chinese and Japanese cuisines also make use of mustard greens. In Japanese cuisine it is known as Takana and is often pickled and used as filling in onigiri or as a condiment. A large variety of B. juncea cultivars are used, including zha cai, mizuna, takana (var. integlofolia), juk gai choy, and xuelihong. Asian mustard greens are most often stir-fried or pickled. A Southeast Asian dish called asam gai choy or kiam chai boey is often made with leftovers from a large meal. It involves stewing mustard greens with tamarind, dried chillies and leftover meat on the bone.

Medicinal Uses:
Reported to be anodyne, apertif, diuretic, emetic, rubefacient, and stimulant, Indian Mustard is a folk remedy for arthritis, footache, lumbago, and rheumatism. Seed used for tumors in China. Root used as a galactagogue in Africa. Sun-dried leaf and flower are smoked in Tanganyika to “get in touch with the spirits.” Ingestion may impart a body odor repellent to mosquitoes (Burkill, 1966). Believed to be aperient and tonic, the volatile oil is used as a counterirritant and stimulant. In Java the plant is used as an antisyphilitic emmenagogue. Leaves applied to the forehead are said to relieve headache (Burkill, 1966). In Korea, the seeds are used for abscesses, colds, lumbago, rheumatism, and stomach disorders. Chinese eat the leaves in soups for bladder, inflammation or hemorrhage. Mustard oil is used for skin eruptions and ulcers.

This plant is used in phytoremediation to remove heavy metals, such as lead, from the soil in hazardous waste sites because it has a higher tolerance for these substances and stores the heavy metals in its cells. The plant is then harvested and disposed of properly. This method is easier and less expensive than traditional methods for the removal of heavy metals. It also prevents erosion of soil from these sites preventing further contamination

It is a large thorny shrub with yellow wood & whitish or pale Grey branches.The dried root of the plant constitute the drug.The chief constituent of the drug is berberine.

The root-bark is light coloured, corky, almost inodorous, with a bitter, mucilaginous taste. It contains much Berberine, and a dark-brown extract is made from it employed in India under the name of ‘Rusot.’ This extract is sometimes prepared from the wood or roots of different species of Barberry. It has the consistency of opium and a bitter, astringent taste.
Use: Indian berberry hasbeen made official in the Pharmacopoeia of India.It is an amportant indigenous medicine.The bark is useful in restoring the disordered process of neutrition and restores the normal function of the system.It helps open the natural pores of the body, arrest bleeding and induces copious perepiration despite the astrigent properties.The drug also constitute anti-tubercular activities.

Fever: Indian barberry is as valuable as quinine in maleria fevers.It is particularly useful in relieving pyrexia and checking the return of the violent intermittent fevers.The herb’s- bark and the root- bark are given as a decoction. It should be given twice or thrice a day.The decoction is given in doses of 150 grams between paroxysms of fever.

Monorrhagia: Indian barberry arrestes excessieve bleed loss during the monthly period.In skin diseases the decoction of the bark and the root-bark is efficacious as a cleanser for ulcers ans sores, as it helps formation of scar over the wounds.

Description:
Coccinia cordifolia is a large, glabrous, deciduous climbing shrub. The stems are rather succulent with long filiform fleshy aerial roots from the branches. Edible Uses:
In India it is eaten as a curry, by deep-frying it along with spices; stuffing it with masala and sauteing it, or boiling it first in a pressure cooker and then frying it. It is also used in sambar, a vegetable and lentil-based soup.

There are a variety of recipes from all over the world that list ivy gourd as the main ingredient. It is often compared to bitter melon. The fruit is commonly eaten in Indian cuisine. People of Indonesia and other southeast Asian countries also consume the fruit and leaves. In Thai cuisine it is one of the ingredients of the Kaeng khae curry. Cultivation of ivy gourd in home gardens has been encouraged in Thailand due to it being a good source of several micronutrients, including vitamins A and C.

Constituents:
Tinsporine, tinosporide, tinosporaside, cordifolide, cordifol, heptacosanol, clerodane furano diterpene, diterpenoid furanolactone tinosporidine, columbin, and ß-sitosterol.

Medicinal Uses:
In traditional medicine, fruits have been used to treat leprosy, fever, asthma, bronchitis and jaundice. The fruit possesses mast cell stabilizing, anti-anaphylactic and antihistaminic potential.  In Bangladesh, the roots are used to treat osteoarthritis and joint pain. A paste made of leaves is applied to the skin to treat scabies.

Ivy gourd extracts and other forms of the plant can be purchased online and in health food stores. It is claimed that these products help regulate blood sugar levels. There is some research to support that compounds in the plant inhibit the enzyme glucose-6-phosphatase. Glucose-6-phosphatase is one of the key liver enzymes involved in regulating sugar metabolism. Therefore, ivy gourd is sometimes recommended for diabetic patients. Although these claims have not been supported, there currently is a fair amount of research focused on the medicinal properties of this plant focusing on its use as an antioxidant, anti-hypoglycemic agent, immune system modulator, etc. Some countries in Asia like Thailand prepare traditional tonic like drinks for medicinal purposes.

The leaves are rubbed on skin diseases  like  eximas,sorasis  etc  to get releaf.

Carom, omoum,Ajowan, Bishop’s Weed , Seeds Of Bishop’s Weed,Wishep’s weed or Ajova Seed, is an uncommon spice except in certain areas of Asia. It is the small seed-like fruit of the Bishop’s Weed plant, (Trachyspermum ammi syn. Carum copticum), egg-shaped and grayish in colour. The plant has a similarity to parsley.

Habitat :It originated in the eastern Mediterranean, possibly Egypt, and spread up to India from the Near East.

Ajowan looks like wild parsley (similar to caraway, celery and cumin seeds) and is a native of India. It is grown throughout the country in Madhya Pradesh, Andhra Pradesh, Gujarat, Maharashtra, Uttar Pradesh, Rajasthan, Bihar and West Bengal. It is also grown in Pakistan, Afghanistan, Iran and Egypt. The striped seeds are used as the spice.

Botany

Ajowan is an erect, glabrous or minutely pubescent, branched annual that grows upto 90 cm. Stems are striate and leaves are distant and pinnately divided. Small white flowers are on terminal or seemingly lateral pedunculate, compound umbels. The fruits are ovoid, greyish brown, aromatic cremocarps with single seed.

Cultivation

Ajowan grows on all kinds of soil but does well on loams or clayey loams, both as a dry crop and under irrigation. Seeds are sown from September to November. The plants flower in about two months and the fruits become ready for harvesting when then flower heads turn brown. They are pulled out, dried on mats and the fruits are separated by rubbing by hands or feet.

Aroma and flavour

The sensoric quality of ajowan is similar to thyme, but stronger and less subtle. The essential oil (2.5 to 5% in the dried fruits) is dominated by thymol (35 to 60%); furthermore, a-pinene, b-cymene, limonene and e-terpinene have been found.

History:
Ajwain originated in the Middle East, possibly in Egypt. It is now primarily grown and used in the Indian Subcontinent, but also in Iran, Egypt and Afghanistan. It is sometimes used as an ingredient in berbere, an Ethiopian spice mixture

Culinary use:
Usage of ajowan is almost confined to Central Asia and Northern India. Ajowan is particularly popular in savoury Indian recipes like savoury pastries, snacks and breads. Ajowan enjoys, however, some popularity in the Arabic world and is found in berebere, a spice mixture of Ethiopia which shows both Indian and Arabic heritage. In Southern Indian cuisine (which is predominantly vegetarian), tadka-like preparations are not only applied to dried lentils and beans, but also to green vegetables.

Method: Cow ghee is taken in a pan, Ajwain, gud and ata  are required to be roasted  till the color  turns redish and then water or milk is added. It is served hot.

Ajwain holds a reputed position as medicinal herb in different systems of medicine in India.  According to Ayurveda, its seeds are hot, bitter, pungent, stomachic, appetizer, aphrodisiac, anthelmintic, carminative, laxative and cure ascites, abdominal tumours, spleen enlargement, piles, vomiting, abdominal pain, good for heart and toothache etc. According to Unani system of medicine, the seeds are bitter and hot, carminative, diuretic, good in weakness of limbs, paralysis, chest pains etc. it is useful in treatment of ear boils, liver spleen, hiccup, vomiting, dyspepsia, kidney troubles, inflammation etc. Ajwain Ke Halwa is a sweet preparation popular among the senior natives and traditional healers of Chhattisgarh.  It is not prepared by the natives.  The senior natives and traditional healers are aware of above mentioned medicinal uses of Ajwain but they prepare Ajwain Ke Halwa only for female patients having gynaecological troubles.  This preparation is considered as a boon for these patients.

In the Middle East, ajowan water is often used for diarrhoea and wind and in India the seeds are a home remedy for indigestion and asthma.  For reasons of both flavor and practicality its natural affinity is with starchy foods and legumes.  Because of its thymol content, it is a strong germicide, anti-spasmodic, fungicide, and anthelmintic.  Regular use of Ajwain leaves seems to prevent kidney stone formation.   It also has aphrodisiac properties and the Ananga Ranga prescribes it for increasing the enjoyment of a husband in the flower of his life

Ajwain is very useful in alleviating spasmodic pains of the stomach and intestines, in adults as well as children. Any colicky pain due to flatulence (gas), indigestion and infections in the intestines can easily be relieved by taking one teaspoonful of ajwain along with 2-3 pinches of common salt in warm water. Use half the dose in children. Mixed with buttermilk it is a good anti-acidic agent

For chronic bronchitis and asthma, mix ajwain with jaggery (gur). Heat the mixture to make a paste and take 2 teaspoonsful twice a day. However, diabetics should not take this preparation because of the sugar content. It helps to bring out the mucus easily. It also helps in chronic cold.

In an acute attack of common cold or migraine headache, put ajwain powder in a thin cloth and smell this frequently. It gives tremendous symptomatic relief according to some Ayurvedic experts.
If people who consume excessive alcohol develop discomfort in the stomach, taking ajwain twice a day, will be very useful. It will also reduce the craving and desire for alcohol.

In some parts of Africa, the leaves are eaten as a vegetable.

Medicinal Uses;
Chinese Violet is  used as an herbal remedy in traditional African medicine. The leaves are used in many parts of Nigeria for the management of asthma, and scientific investigation has shown some basis for this use.

Other Uses;
Chinese Violet is used as an ornamental plant in several places.This is also an important plant for honeybees, butterflies and other insects. In southern Africa there are at least six species of butterfly that use A. g. micrantha as a larval foodplant; Junonia oenone, Junonia hierta, Junonia natalica, Junonia terea, Protogoniomorpha parhassus and Hypolimnas misippus. The vigorous growth of A. g. micrantha in tropical regions makes it a weed which can smother certain indigenous vegetation where it has been introduced.

Extensive, much-branched, twining shrubs. Leaves 3-6 x 2-3 cm, ovate or elliptic-oblong, apiculate, rounded at base, sub-coriaceous. Flowers minute, greenish-yellow, spirally arranged in lateral pedunculate or nearly sessile cymes. Corolla lobes imbricate. Follicles solitary, upto 8 x 0.7 cm, terete, lanceolate, straight or slightly curved, glabrous. Seeds ovate-oblong, glabrous, winged, brown. Flowering: August-March; Fruiting: Winter.

Madhunashini is an evergreen climber and the best season for planting is June-July. After the ploughing and leveling of the land, 45 cm3 sized pits are made at a distance of 2.5 m between the rows and 1.75 m between plants (within the row). The pits are dug open 15 days earlier to planting, they are filled with green leaves and top soil and 2 kgs of well rotten manure per pit is added. The pits are to be irrigated and left for one week, then the rooted cuttings are planted in the pits.

HARVESTING AND YIELD
The crop is ready for harvest two years after planting. Leaves are the economic part and the harvesting of the leaves begins when plants start flowering i.e., during end of June or first week of July. Leaves can be harvested along with flowers either by hand or can be cut with sickle/knife. The harvest leaves are dried under shade by allowing sufficient air to circulate by spreading thinly on clear ground for about7-8 days. Direct sunlight should be avoided to maintain the quality of the leaves.

The crop is harvested only once in a year during flowering and on an average 5-6 kg dried leaves per plant can be obtained from a 4 years old plant yielding about 10,000 – 15,000 kgs of dried leaves per hectare. The crop can be cultivated for 10-15 years under good management.

Chemical Composition:
The leaves contain hentriacontane, pentatriacontane, a-and ß-chlorophylls, phytin, resins, tartaric acid, formic acid, butyric acid, anthraqui-none derivatives, inositol, d -quercitol and “gymnemic acid”. The leaves give positive tests for alkaloids. Flavonol glycosides, kaempferol and quercetin have been isolated from the aerial parts of the plant (Liu et al., 2004). Three new oleanane-type triterpene glycosides were isolated from the leaves of the plant. Six oleanane-type saponins (Ye et al., 2000, 2001). Few new tritepenoid saponins, gymnemasins A, B, C and D were also isolated from the leaves of Gymnema sylvestre (Suttisri et al., 1995, Sahu et al., 1996).

Medicinal Property & Uses:  The plant is stomachic, stimulant, laxative and diuretic. It is good in cough, biliousness and sore eyes. If the leaves of the plant are chewed, the sense of taste for sweet and bitter substances is suppressed (Gent, 1999, Persaud et al., 1999, Intelegen, 2004). The leaves are said to be used as a remedy for diabetes (Prakash et al., 1986; Shanmugasundaram et al., 1990; Grover et al., 2002; Gholap & Kar, 2003}. It has been included among the most important herbs for all doshas (Mhasker & Caius, 1930; Holistic, 2004). It has shown effective activity against Bacillus pumilis, B. subtilis, Pseudomonas aeruginosa and Staphylococcus aureus (Satdive et al., 2003). Tribals in Chhindi rub the leaves on infected body parts to cure infections.

The leaf powder is tasteless with a faint pleasant aromatic odour. It stimulates the heart and the circulatory system, increases the secretion of urine, and activates the uterus. Tribals of Central India prepare decoctions of Methi/ fenugreek (Trigonella foenum-graecum), Gudmar (Gymnema sylvestre), Arjuna (Terminalia arjuna), Ajwan (Trachyspermum ammi), gokshura (Tribulus terrestris), vayu-vidanga (Embelia ribes), Guduchi (Tinospora cordifolia), Harra (Terminalia chebula), and chitrak (Plumbago zeylanica) to cure diabetes and stress related disorders.

Traditional healers from various states of India use this plant in various ailments. Leaf is given in gastric troubles in Rajasthan. Traditional healers of Maharastra prescribe it in urinary problems and stomachache whereas in Madhya Pradesh, tribals and local healers apply the leaf extract in cornea opacity and other eye diseases. In Andhra Pradesh it is used in glycosuria.

In Indian Ayurveda it is mainly used in the treatment of Diabetes, hydrocil & Asthama.

It is the need of the hour to save this highly important medicinal plant of Patalkot valley. If proper initiatives would not be taken in time, there would not be single Gymnema plant in the valley. It is urged to the scientists, conservationists, researchers, NGO’s and other bodies to come forward and take moves to protect this important herb. Local farmers should be encouraged to cultivate this herb. Government and policy makers are having lots of plans/ ideas but they find problems in proper implementations. It is the youth and people from literate world who should come forward to take this task in their hands.

 Other uses: Alcoholic extract has a dry leaves showing antibacterial activity against Bacillus pumilus , Bacillus subtilis , Pseudomonas aeruginosa and Staphylococcus aureus .

Caution:    If the indicated amounts are used, ie no more than 400mg per day is generally safe, well tolerated and no side effects.  During pregnancy and lactation has not been determined whether or not there may be side effects.  Still, it is recommended to consult a medical practitioner before taking Gymnema extract diabetic children and elderly.  Contraindicated if used in combination with oral hypoglycemic drugs.  Be careful when taking gymnema with glipizide, glyburide and insulin.

Habitat :  Ginger is a herb that is indigenous to the South West coast of India. Description:

Zingiber officinale is usually about four feet tall, with long, narrow leaves that measure around seven inches long. When the plant flowers, it produces small yellow-green flowers. The word “zingiber” is a distant relative of the Sanskrit word “shringavera,” which means “shaped like a deer’s antlers” (referring to the shape of the plant’s leaves)..

Different Uses:
Ginger used for cooking and medicinal purposes is not the outer part of the ginger plant, but the root. Ginger root is light beige in color and looks a bit like a hand, with many small extensions from a larger main body. Ginger root should be firm and have no growths on the exterior.

Gari (ginger)Ginger produces a hot, fragrant kitchen spice.[5] Young ginger rhizomes are juicy and fleshy with a very mild taste. They are often pickled in vinegar or sherry as a snack or just cooked as an ingredient in many dishes. They can also be steeped in boiling water to make ginger tea, to which honey is often added; sliced orange or lemon fruit may also be added. Ginger can also be made into candy.

Mature ginger roots are fibrous and nearly dry. The juice from old ginger roots is extremely potent[6] and is often used as a spice in Indian recipes, and is a quintessential ingredient of Chinese, Korean, Japanese and many South Asian cuisines for flavoring dishes such as seafood or goat meat and vegetarian cuisine.

Ginger acts as a useful food preservative.

Fresh ginger can be substituted for ground ginger at a ratio of 6 to 1, although the flavors of fresh and dried ginger are somewhat different. Powdered dry ginger root is typically used as a flavoring for recipes such as gingerbread, cookies, crackers and cakes, ginger ale, and ginger beer.

Candied ginger is the root cooked in sugar until soft, and is a type of confectionery.

Fresh ginger may be peeled before eating. For longer-term storage, the ginger can be placed in a plastic bag and refrigerated or frozen.

Culinary Use: The essential oil is used in commercial flavourings. Fresh root ginger is extremely popular in a huge variety of stir-fry or curry dishes. Authentically, fresh root India and oriental countries. It is incorporated by different techniques slices may be added to marinades or in cooking, to be discarded on the side of the plate or bowl as the food is eaten. Grated, chopped or crushed ginger is used in pastes or braised dishes. Finely shredded ginger is added to fried and stir-fried dishes, or it may be used raw in salads. The Benefits of Ginger

Ayurveda considers it to be one of the best herbs which nullify the toxins produced in the body due to improper digestion. Fresh ginger is useful in alleviating cold and cough whereas the dried one has more anti-“vata” effect. Due to its “pitta” aggravating properties, excessive use of ginger is contra-indicated in conditions involving hyperacidity, ulcers and gall stones.

Nausea – it is often used to ease nausea caused by travelling or pregnancy as well as that due to other causes.
Digestion – it has the ability to calm the stomach, promote the flow of bile, and improve the appetite.
Stomach Cramps caused by wind – it can relieve these, often quicker than any other herbal medicine.

Cholesterol – studies have suggested that ginger may be useful in keeping cholesterol levels under control, although how this works is not yet understood.
Respiratory infections – it is well known for its warming expectorant action on the upper respiratory tract, and this is why Chinese herbalists have traditionally used ginger to treat colds and influenza.

For more than 5,000 years Ginger has been used for the relief of the occasional upset stomach. Ginger, a warming energizer, is traditionally known to support the digestive and immune systems. In ancient Sanskrit, Ginger was called Vishwabhesaj, which means the universal medicine. Ayurvedic practitioners use Ginger to activate Agni, the body’s fire element. Agni burns up Ama, naturally occurring toxins and undigested food in the body. When you decrease Ama, the body gains strength, balance and harmony.

Medicinal and Other Use: Henry VIII is said to have used ginger as a medicine for its qualities, as outlined by Culpeper, the herbalist, 150 years later: Ginger helps digestion, warms the stomach, clear the sight, and is profitable for old men; it heats the joints and is therefore useful against gout’. Ginger has an impressive record in treating all kinds of ailments: it is said to help poor circulation, and to cure flatulence and indigestion; it is taken as a drink for coughs, nausea and influenza. In the East ginger is chewed to ward off evil spirits. it is considered to be a cure for travel sickness. The essential oil is used in perfumery.

One medical research study had results indicating that ginger might be an effective treatment for nausea caused by motion sickness or other illness, The study however, failed to show a significant difference between ginger and a placebo. There are several proposed mechanisms of action for the anti-emetic properties of ginger but there is not yet conclusive support for any particular model.

Modern research on nausea and motion sickness used approximately 1 gram of ginger powder daily. Though there are claims for efficacy in all causes of nausea, the PDR recommends against taking ginger root for morning sickness commonly associated with pregnancy due to possible mutagenic effects. Nevertheless, Chinese women traditionally have taken ginger root during pregnancy to combat morning sickness. The Natural Medicines Comprehensive Database (compiled by health professionals and pharmacists), states that ginger is likely safe for use in pregnancy when used orally in amounts found in foods. Ginger ale and ginger beer have been recommended as “stomach settlers” for generations in countries where the beverages are made. Ginger water was commonly used to avoid heat cramps in the United States in the past.

In Western-hemisphere nations, powdered dried ginger root is made into capsules and sold in pharmacies for medicinal use. In the US, ginger is not approved by the FDA for the treatment or cure of any disease. Ginger is instead sold as an unregulated dietary supplement. In India, ginger is applied as a paste to the temples to relieve headache. Ginger has also historically been used in folk medicine to treat inflammation, although medical studies as to the efficacy of ginger in decreasing inflammation have shown mixed results. There are several studies that demonstrate a decrease in joint pain from arthritis after taking ginger, though the results have not been consistent from study to study. It may also have blood thinning and cholesterol lowering properties, making it theoretically effective in treating heart disease; while early studies have shown some efficacy, it is too early to determine whether further research will bear this out.

The medical form of ginger historically was called “Jamaica ginger”; it was classified as a stimulant and carminative, being much used for dyspepsia and colic. It was also frequently employed to disguise the taste of nauseous medicines. The tea brewed from this root was an old-fashioned remedy for colds.

The characteristic odor and flavor of ginger root is caused by a mixture of zingerone, shoagoles and gingerols, volatile oils that compose about 1%–3% by weight of fresh ginger. The gingerols have analgesic, sedative, antipyretic, antibacterial, and GI tract motility effects.

Ginger is on the GRAS list from FDA. However, like other herbs, ginger may be harmful because it may interact with other medications, such as warfarin; hence, a physician or pharmacist should be consulted before taking the herb. Ginger is also contraindicated in people suffering from gallstones, because the herb promotes the release of bile from the gallbladder.

Properties
Pungent oleoresins – these have been identified as the phenylalkylketones, known as gingerols, shogaols and zingerone. The dried root of ginger has been shown to be more potent than the fresh root with regard to shogaol, which is thought to be the most potent of the constituents of ginger.

Contra-indications/Precautions
Anyone with a history of gallstones should consult a medical practitioner prior to use. Short-term use of low levels during the first three months of pregnancy appears to have no adverse side effects. Anyone using anticoagulants should not use ginger.

Ginger allergies
Some people are allergic to ginger. Generally, this is reported as having a gaseous component. This may take the form of flatulence, or it may take the form of an extreme constriction or tightening in the throat necessitating uncontrollable burping to relieve the pressure .

Description:
Chickpea is an annuak plant. It grows to between 20–50 cm (8–20 inches) high and has small feathery leaves on either side of the stem. Chickpeas are a type of pulse, with one seedpod containing two or three peas. It has white flowers with blue, violet or pink veins. It is not frost tender. It is in flower from Jun to July, and the seeds ripen from Aug to September. The flowers are hermaphrodite (have both male and female organs)It can fix Nitrogen.

Types:
There are three main kinds of chickpea.
Desi has small, darker seeds and a rough coat. It is grown mostly in India and other parts of the Indian subcontinent, as well as in Ethiopia, Mexico, and Iran. Desi means ‘country’ or ‘local’ in Hindustani; its other names include Bengal gram or kala chana (“black chickpea” in both Hindi and Urdu) or chhola boot. Desi is probably the earliest variety because it closely resembles seeds found both on archaeological sites and the wild plant ancestor Cicer reticulatum of domesticated chickpeas, which only grows in southeast Turkey, where it is believed to have originated. Desi chickpeas have a markedly higher fibre content than other varieties, and hence a very low glycemic index, which may make them suitable for people with blood sugar problems. The desi type is used to make chana dal, which is a split chickpea with the skin removed.

Bombay chickpeas (Bambai) are also dark but slightly larger than desi. They too are popular in the Indian subcontinent.

Kabuli are lighter-coloured, larger and with a smoother coat, and are mainly grown in the Mediterranean, Southern Europe, Northern Africa, South America and Indian subcontinent. The name means “from Kabul” in Hindi and Urdu, and this variety was thought to come from Kabul, Afghanistan when it was introduced to India in the 18th century. It is called Kabuli chana in Marathi and safed chana in India.

An uncommon black chickpea, ceci neri, is grown only in Apulia, in southeastern Italy. It is larger and darker than the desi variety.

Green chickpeas are common in the state of Maharastra, India. In Marathi, they are called harbhara. Chana dal is also called harbara dal . Tender, immature harbara roasted on coal before the skin is removed is called hula in Marathi.
Cultivation:
Requires a hot sunny position, tolerating drought once established. Prefers a light well-drained fertile soil. Tolerates a pH in the range 5.5 to 8.6. Plants are hardy to about -25°c when covered by snow. This suggests that plants can be autumn sown – some trials are called for, especially of some of the hardier cultivars. The chickpea is widely cultivated in warm temperate and tropical areas for its edible seed. There are many named varieties, some of which should be suitable for cultivation in Britain. Plants only succeed outdoors in Britain in hot summers. Plants are about as hardy as broad beans but they often do not succeed in mild moist maritime climates because the seedpods are hairy and this holds moisture. The moisture then encourages fungal growth and the seed usually rots before it is fully mature. Plants require 4 – 6 months with moderately warm dry conditions if they are to crop well. This species has a symbiotic relationship with certain soil bacteria, these bacteria form nodules on the roots and fix atmospheric nitrogen. Some of this nitrogen is utilized by the growing plant but some can also be used by other plants growing nearby. When removing plant remains at the end of the growing season, it is best to only remove the aerial parts of the plant, leaving the roots in the ground to decay and release their nitrogen.

Propagation:
Seed – sow April/May in situ under cloches. Chick peas can germinate at lower temperatures than broad beans. Could an early spring or even autumn sowing outdoors be successful

Seed – raw or cooked. The fresh or dried seed is cooked in soups, stews etc. It has a somewhat sweet flavour and a floury texture somewhat reminiscent of sweet chestnuts. The mature seed can also be sprouted and eaten raw. Parched seeds can be eaten as a snack. The seed can also be ground into a meal and used with cereal flours for making bread, cakes etc. The seed is a good source of carbohydrates and protein. The roasted seed is a coffee substitute. The roasted root can also be used. Both the young seedpods and the young shoots are said to be edible but some caution is advised. See the notes above on toxicity. A refreshing drink can be made from the acid dew that collects on the hairy seedpods overnight.

Nutrition:
Chickpeas are a nutrient-dense food, providing rich content (> 20% of the Daily Value, DV) of protein, dietary fibre, folate, and certain dietary minerals such as iron and phosphorus. Thiamin, vitamin B6, magnesium and zinc contents are moderate, providing 10-16 percent of the DV (right table). Chickpeas have a Protein Digestibility Corrected Amino Acid Score of about 76 percent, which is higher than fruits, vegetables, many other legumes, and cereals.

Compared to reference levels established by the United Nations Food and Agricultural Organization and World Health Organization,[20] proteins in cooked and germinated chickpeas are rich in essential amino acids like lysine, isoleucine, tryptophan and total aromatic amino acids.

A 100 g serving of cooked chickpeas provides 164 kilocalories (690 kJ) (see table). Carbohydrates make up 68 percent of calories, most of which (84 percent) is starch, followed by total sugars and dietary fibre. Lipid content is 3 percent, 75 percent of which is unsaturated fatty acids for which linoleic acid comprises 43 percent of total fat

Medicinal Uses: An acid exudation from the seedpods is astringent. It has been used in the treatment of dyspepsia, constipation and snakebite

Other Uses: Animal feed:
Chickpeas serve as an energy and protein source not only in human nutrition but also as animal feed.
